......that's what the self-professed Cupcake Lover said to H when he ordered another batch of vanilla cupcakes today. Apparently, his coworkers took five out of his six cupcakes. And one cupcake is certainly NOT enough for a Cupcake Lover!
So here's another batch ALL for him. And him ALONE!

Lemon Poppyseed Muffins

I have wanted to make these for the longest time ever but never got around to actually buying the poppyseeds to make them. I know the icing looks a bit sad but was actually rushing to "drizzle" them on before going out. Luckily the taste was okay as compared to the looks! =P


Order from H's Office

H received two orders for 1/2 dozen cupcakes from his work mates whilst I was away in Saigon. One of them is a self-professed Cupcake Lover. Apparently he even dreams of cupcakes. :-)
Thought that was kinda funny....coming from a guy. Hopefully, he loves my cupcakes and will put in a weekly standing order!!


Actually, I baked 4 dozen of cupcakes today - half batch vanilla and the other chocolate. In addition to the dozen for H's workmates, I gave a dozen to my boys' Mandarin teachers, 4 to my staff, and the remainder for our own consumption. No photos for these as I ran out of time (boys were leaving for their class), and the rest did not have piped frosting....just a small dollop of vanilla buttercream.

Happy Father's Day Cupcakes


My (almost) six-year-old son made these chocolate cupcakes for his daddy for Father's Day. With a little assistance from mummy of course. He measured out the flour and sifted it, cracked the egg, mix all the ingredients together and spoon the batter into the paper cases. I rolled out the fondant for him and he used cookie cutters to cut out the letters, a heart and a star. I made the buttercream frosting and he piped them onto the cupcakes and put the letters on top. This, without mummy's help :) Needless to say, Daddy (and Mummy!) was very pleased and proud!

Happy Birthday, Mum!


Today is our mum's birthday. She likes chocolate cake, so these are dedicated to her. 'Dedicated' because we are in different countries. And also because she doesn't eat birthday cakes. But that's another story for another blog.
These are actually Nigella's coca-cola cupcakes. They are moist and chocolatey enough with just a hint of coca-cola. Anyone who has 'How to be a Domestic Goddess' should try them out.

Nutty Over Nutella!


A neighbour/friend came over with her sons for a playdate today. And I decided to make these Nutella cupcakes. Do you remember when you were young, you used to spread Nutella on your bread? Or perhaps you still do? I know I do. And I do it for my sons too :)
These are actually vanilla cupcakes with a spoonful of Nutella added into the batter. Before, I would just spread Nutella onto the cupcakes straight from the jar (very yummy!). But today, I decided to make a proper frosting. I just used a normal buttercream recipe and added spoonfuls of Nutella into it, until I was satisfied with the taste. And they turned out absolutely delicious! I topped the cupcake with a Ferrero Rocher and some chopped hazelnuts. Heaven!
GK, this is for you as I know you love Nutella and because your nephew misses you!

A friend of mine likes to eat Butter Cake so I decided to try it out. Not bad for a first attempt but I guess next time gotta be a little bit more hardworking in lining the tin rather than just stuffing the baking paper into the tin. =P

Say Cheese(cakes)!

Yes, I seem to be going through a cheesecake phase. I made this baked blueberry cheesecake last week. Berries again, you say. Well, there was a discount on blueberries in the supermarket, so what better time to make something with blueberries? But I tell you, I think next time I'll just buy the puree straight. It's a lot of work straining those berries through a sieve!



And yesterday, I made an oreo cheescake. This one is just a chilled one, no baking whatsoever. There's whipped cream added to it, so it's very light, not dense like a normal cheesecake. I know my photography is very bad, but do not let looks deceive you!! Both cheesecakes were very well-received!

Chocolate Cupcakes


Was so inspired by my sisters that I decided to bake some chocolate cupcakes today.

Cupcakes for the Office...

Made these mini cupcakes for my hubby's office. There's about36 chocolate and 30 vanilla ones.... All frosted with either vanilla or chocolate buttercream.




My hubby actually does NOT eat cupcakes. If it's in a SLICE form, he'll eat it.
Cupcake? Nope.
My friends asked him if he was toooooo MACHO to eat cupcakes, and he said YES!
But today, he actually ate my cupcakes... and this was without being asked to!
Guessed cupcakes are for MACHO guys too!
